No Guilt Pound Cake [Paleo, Gluten Free]

Here is a tasty recipe that I adapted from this post. Originally the recipe calls for blueberries to give the pound cake some bulk. I edited out many of the ingredients to create my Easy Almond “Pound” Cake. Here is the recipe:  

Easy Almond “Pound” Cake

      1 cup + 2 tablespoons almond flour
      1/4 cup + 2 tablespoons coconut flour
      3/4 cup coconut sugar (or you can use 1/4 cup coconut sugar and 1/4 cup raw honey)
      1/4 teaspoon salt
      1-1/2 teaspoons baking powder
      1-1/2 teaspoons almond extract
      1-1/2 teaspoons vanilla extract
      3 eggs
      1/4 cup + 2 tablespoons water

 

        Preheat your oven to 350 degrees.
        Mix dry ingredients together  in one bowl and wet in another. Add wet ingredients to dry and mix well.  Pour your batter (which will be soupy and somewhat grainy- that’s ok!) into your pan of choice. Bake for 28-30 mins.
        ***you can add whatever fruit you would like. I just made a simple pound cake sans fruit this time. If you do not add fruit to your batch you will find that this recipe will yield a small cake or about 8 regular size muffins.
        A tip for cooking paleo baked goods: I usually find that paleo cakes and cookies can dry out quickly because coconut flour absorbs moisture extremely well. To combat this I like to make individual sized cakes in muffin trays instead of a loaf. This will help not only to keep your cakes moist but with portion control as well.

One more thing before I go…

Eating paleo may seem difficult (paleo refers to the paleolithic diet. Read more about it here) but you can easily incorporate simple paleo meals into your everyday life. The basis of paleo cooking is to use fresh meats and vegetables and to prepare them in a way that is grain and dairy free. My favorite paleo dinner is chicken sausage (all natural, of course) and sauteed spinach in garlic. This is a super healthy and easy meal. You could even add some cauliflower mashed “potatoes” or even half a sweet potato to create a delicious and filling meal that your entire family will enjoy. You don’t need to follow paleo every single day of your life, but just changing a few meals a week will help you achieve your health goals!
